The Mango-rita ~ Yummy Cocktail for Summer Sipping

It’s the middle of the week so let’s start thinking about the weekend.  Sweet Shark found tore out this recipe from some magazine that we’ve never heard of heard of when we were on vacation a few years ago.  It had a different name and he completely re-invented it, so I gave it a new name and it’s now totally his.  When he brought a mango home on Saturday, I knew he planned something fun to do with it.  After I showed him (again) how to slice around the pit and dice the mango, he was on his own.  About 10 minutes later, he called me into the SharkBar and served me this refreshing drink that makes you feel like you are on (or should be on) a tropical beach. You can add a little umbrella if you would like. Let me introduce you to the mango-rita ~ a yummy cocktail for summer sipping if I ever drank one.

Every bar needs its own special coaster. I ordered these on-line for Sweet Shark after his bar was installed and completed.  I wish I could remember where I ordered them.

Sweet Shark’s Mango~Rita

This cocktail is just right for enjoying at the beach, the lake, or by the backyard pool.

The Mango-rita ~ Yummy Cocktail for Summer Sipping; try this tropical drink perfect for sipping out by the pool or at your local beach.

Serves 1

½ cup small-diced mango
2 slices jalapeño (seed first, if desired)
1 ounce agave nectar*
1 ounce fresh squeezed lime juice
2 ounces tequila*
dash Angostura bitters

For the glass: use a lemon or lime slice to coat the rim of the glass; coat the rim with sugar
For garnish: lime slice, mango slice, a slice of jalapeno; umbrella optional

1. In a cocktail shaker, muddle the mango, jalapeño and agave nectar.
2. Add the remaining ingredients and a cup of ice cubes. Shake until chilled.
3. Fill glass with ice cubes and strain drink mixture into glass.
4. Garnish with a slice of lime and a slice of mango. Float a jalapeño slice in the drink.

*Agave Nectar (amber) – (pronounced ‘uh-GAH-vay’) is a natural sweetener with a pleasant neutral taste. It’s about 1.5 times sweeter than sugar

*Sweet Shark used Sauza Blue

Enjoy and raise that pretty glass in a toast. Sip slowly and savor. Think of me.
