  1. Preheat the oven to 400˚F.
  2. In a small bowl, combine the sugar and ground cinnamon.
  3. Place a piece of parchment paper on a half sheet pan. Place 1 sheet of phyllo dough on top and spray evenly with the olive oil spray. Sprinkle about 1 teaspoon of the sugar/cinnamon mixture on the phyllo distributing evenly. Repeat with the remaining 5 sheets of phyllo.
  4. Arrange the halved cherries on top of the phyllo, cut side up. Sprinkle with the remaining sugar/cinnamon mixture.
  5. Place in the oven and bake for 10 ~ 12 minutes, until golden brown. Watch carefully after 10 minutes so that phyllo doesn’t get too brown.

Notes

Blueberries, raspberries, or blackberries may be substituted. Make sure that fruit is dry.
